Dip-dadipdipdip


With a farewell party for a couple of boatie/foodie friends tonight, I thought it the perfect occasion to try out an interesting recipe found on Dinner: A Love Story just the other day: Minty Pea Dip! Intriguing, right? Apparently, it's originally a Jamie Oliver crudité dip recipe including yogurt, so I'll have to try it that way next time, but tonight it lactose-free and getting smeared on baguette slices! Fingers-crossed for good reviews!!


Minty Pea Dip

1 cup frozen peas, thawed (or not...)
a handful of fresh mint leaves
~2 tablespoons fresh Parmesan
juice from half a lemon
1/3 cup olive oil
salt

whirl the above ingredients in a food processor (or a broke-ass blender seeing as we're limited down here in paradise!) until it's the consistency of guacamole. Garnish with more Parmesan and serve with baguette slices, crustini and/or crudité. Enjoy!
